Makes the probesize and analyzeduration configurable with env args.
(`JELLYFIN_FFmpeg_probesize` and `FFmpeg_analyzeduration`)

5c1fbfca03 Stop path substitution in SubtitleEncoder 
This fixes jellyfin/jellyfin#1446. I am not an expert in this section of
code, but I cannot think of a need to do path substitution during
subtitle encoding.
